For those who've never cooked with fish or for seafood enthusiasts alike, two-day cookery courses at Rick Stein’s seafood school teach you the techniques you'll need in order to create really impressive fish dishes.
Using the freshest fish that is often landed right on the school’s doorstep, the team of chefs show you how to choose good fish and how to make the very best of it in the kitchen.
The two-day cookery courses offer the perfect balance of demonstrations by the chefs and hands-on cooking - plus plenty of time to enjoy the fruits of your labour whilst overlooking the camel estuary.
You will learn skills such as preparing lobsters and filleting fish, as well as creating some of Rick Stein’s famous recipes, such as seared scallops with Ibérico ham, Galician hake on a braise of potatoes, garlic, tomato and onion and charcoal-grilled skewers of squid with cumin, coriander, lime juice and chilli – all enjoyed with a glass of something cold like Bourgogne Blanc Vezelay.
It’s not just fish and seafood that feature; the two-day courses include dishes like slow-braised lamb with fresh and dried red peppers, beef rendang and Moroccan chicken with preserved lemon and olives.
You can also choose to upgrade the course to residential, where as well as enjoying two days at Padstow Seafood School, you will also get to stay in one of the beautiful guest rooms nestled across the heart of Padstow and enjoy evening meals and selected wines at The Seafood Restaurant and St Petroc’s Bistro.
